Tilapia, a fish of tropical origin with a light colored flesh, a delicate non-fishy flavor, and no intramuscular bones, is finding its way to the center of the seafood plate in many U.S. homes and restaurants. Supplies of the fish are increasing rapidly, mainly through imports from tropical countries in Asia and Latin America. In 1993, USDA National Agricultural Statistic Service (NASS) reported 33 million pounds (15 million kg) of tilapia on a live weigh equivalent basis were imported in to U.S, This was an 87 per cent increase compared to imports of the previous year and was higher than imports of all salmon products combined.
