摘要

Histological features and myofibrillar proteins of muscles in chickens at 6 and 16 weeks of age. Ramil and Roxas (UPLB) examined the differences in histology and myofibrillar proteins of breast and thigh muscles of commercial broilers and native chickens raised in different management systems at different ages. Some people claim that the distinct taste of native chicken meat could be due to the fact that native chickens are grown in the range where they search for their own food thus resulting to a more exercised muscles.
