Are you one of those who think that buffalo or carabao meat is a "low-class", "poor quality" meat? Well, think again, especially the health conscious ones. Buffalo meat is red meat that is low in fat, calories, and cholesterol yet high in protein, iron and vitamins and minerals. A research by Dr. M. Marchello at North Dakota State University has shown that the meat from buffalo is a highly nutrient dense food because of the proportion of protein, fat minerals, and fatty acids to its caloric value.
