The reason mainly is that white leghorn chickens, which continue to flood the local market, have slowly displaced our native chickens—the not-so-secret ingredient of these delectable homegrown dishes. "Even a typical picture of a bahay kubo (nipa hut) would certainly include chickens freely roaming the garden lot," explains Tony Inocencio, owner of AP Inocencio Farms (Teresa Farms) and pioneer breeder of SASSO chickens in the country.
