摘要

The EU is to tighten up the maximum limits for the food additives nitrites (E 249-250) and nitrates (E 251-252) used in foods, notably cured meat products or ‘charcuterie’ and traditional cheeses, to prevent formation of the carcinogenic and genotoxic (may damage DNA) processing contaminants N-nitrosamines.
