Steve Solomon has been serving as the Mushroom Council's foodservice channel lead and culinary advisor since 2007. With his retirement scheduled for the close of 2021, he looks back at the evolving role of mushrooms in the foodservice and culinary arenas over the past 14 years. Recently, Mushroom News sat down with Solomon to get his perspective on the foodservice side of the mushroom industry, how it's changed, and where it may be going.
