Select lambs for lean meat yield and boost carcase value

The introduction of VIAscan~(R) technology has given abattoirs the opportunity to accurately predict the Lean Meat Yield (LMY) of carcases. The RAS Melbourne lamb carcase competition in September 2002 stimulated considerable industry discussion aboutlean meal yield and its implications for industry. The winning carcases at the 2002 RAS carcase competition were East Friesian first-cross lambs which had a higher yield than the second prize entry which comprised Texel second cross lambs.
