ONE OF the critical challenges facing Australian agriculture is to speed up the transition from production and commodity orientation to a differentiated product and marketing focus. In the advanced economies, consumers spend four to five times the amount on food they need to in order to maintain life. In other words, the raw commodity accounts for only about 20% of the consumer dollar. So it pays farmers to continually explore ways of participating in the benefits of value-adding. The trends towardsmore convenience foods and eating out of the home willensure that this remains an urgent challenge.
