A FORMER welder and boiler-maker at Foster in Victoria's South Gippsland has scored his first export order for jerky, a dried meat snack food. Peter Dailey started making beef jerky for himself, but has now gone into full-time commercial production."It's very labour intensive," Dailey says. "We started in November, 1993, using an old disused dairy on a farm which has been used as a butcher's shop on and off for the past 20 years. We were butchering to the public, but with low door sales and the jerky demanding so much time, we decided to let the butchering go and concen-trate on the jerky.
