At the Grains Industry Conference earlier this year there was a rare presentation from a representative of the domestic flour millers and pastry industry. Dr Dai Suter, speaking on behalf of a number of commercial industry food scientists, surprised many delegates by the fact that Australia's domestic wheat customers are the industry's single largest grain buyer.
