THE PRIME lamb indus- try has arguably achieved more in the last decade than any other area of Australian broad-acre farming. Key to this have been a number of developments and innovations in both the domestic and international markets, including market growth and change in both carcase quality and the presentation of lamb as a convenient, modern and versatile red meat choice. The development of the United States market has been a key driver in the resurgence of the lamb industry. In particular, this market has driven a significant lift in average carcase weight. Over the last ten years average carcase weight has risen by two kilograms. Notably, this has been achieved without an increase in carcase fat reflecting real change in prime lamb genetics.
