Western Australia's premier udon noodle wheat varieties are so good that Japanese and Korean customers are actively seeking them out - which is good news for WA growers as they're not grown elsewhere in Australia. Bryan Whan, chief executive of WA-based wheat breeding company InterGrain, said the breeding program is focused on developing Australian Premium White (APW) and Australian Hard (AH) grade wheats, as well as speciality wheats for the growing udon noodle markets in Korea and Japan. "Wheat breeding programs are dictated by market realities so we have to be realistic and allocate resources to areas with the greatest returns," he said.
