Beef demand in the USA is an economic issue according to New Zealand scientist, Paul Charteris, who is working in The Department of Animal Sciences, Colorado State University. In this article he explains why economics is so important. The western United States is littered with famous conflicts of the past, Custer versus lots of Indians, outlaws versus the law, train robbers versus the railroads and cattle farmers versus sheep farmers. Across the western US - from Texas to Montana - in the late 19thcentury, a series of range wars erupted as cattle and sheep producers fought and killed over rights to land and water. Even today, cattle owners in the western US probably do not own sheep and if ranchers own sheep, they probably do not own cattle (butthey probably have a decent sized coyote population on and around their land). These conflicts shaped ranching in the west and, largely from the west, the beef industry was born. Overcoming the major problems in today's US beef industry requires a littlemore thought than simply shooting neighbours or their sheep, no matter how much sheep are disliked.
