Call it craft, gourmet, artisan or specialty; there is no question of the exponential growth in small mushroom farms in the United States. Given the low start-up costs, the ease and ability to grow almost anywhere, and its health benefits, the fast-growing fungi has spawned interest from hobbyist, green-thumbs, entrepreneurs, and mushroom-loving couples alike. Add a year of stay-at-home freedom to explore and experiment, and mushroom micro-farming is on the rise-and here to stay.While the actual numbers are hard to define, the explosion is evident. Statistics from the last U.S. Census of Agriculture in 2017 counted 1261 mushroom farms, a nearly 80% increase in five years, more than doubling the number of farms. While the reportdoesn't break down the size of each grower, or production output, simple inference indicates that small growers are huge.
