The classic smokehouse flavours in this version (smoked fish; smoked bacon) are balanced by a gentle hint of chilli and the milky-sweet uplift of fresh sweetcorn; you can of course use tinned or frozen sweetcorn if that's more convenient, but fresh corn really gets the party started. As for the fish: the choice is yours (see ingredients) as long as it carries sustainable certification; look for the blue MSC label, and dive in. But is Chowder a starter or a main course? That's entirely up to you and your appetite. If, however, you're sharing yours with guests, I'd suggest serving it up as part of a USA-themed feast with a Cobb Salad, Cornbread and fries on the side.
