In recent years, global nutraceutical sales have grown considerably, with current international sales valued in the order of US 60 billion dollar a year. In the dairy sector, yogurt and dairy beverages have seen much of the focus of nutraceutical product development. A new report from UK research company, Landell-Mills Consulting, argues that cheese has the potential to surpass both of these sectors as a nutraceutical carrier.
