In Japan, at least a total of ca 120 species of marine macroalgae have been eaten by residents somewhere in the country. Consumption of such many species partially depends on the occurrence of high diversity of macroalgae inhabiting the subtropical and warm and cold temperate zones. In this paper, distribution and how to eat of major edible macroalgae were introduced by following 10 geographical divisions from south to north. Furthermore, expansion of their food culture was discussed with migration of diving fishermen, establishment of sea kelp cargo route and inland relocation of agar factory for dehydration freezing.
