摘要

The object of this research was the quantification of nitrate and nitrite salts in the muscle tissue of fattening pigs in the area of Langada-Thessaloniki. It includes as well the examination of feed and water used for feeding. 120 meat samples from five (5) pig breeds, 20 samples of animal feed and 20 water samples were examined from March 2000 to May 2001.
