摘要

There are sufficient official analytic procedures for the species identification in raw and heat treated meat products. We report on the procedure of secured species identification within the scope of a several months long priority program due to the occurance of the first BSE-cases in Germany. Particular consideration was given to the quality control of species specific antibodies which are employed in commercial ELISA-kits. The immunoenzymatic test (ELISA) for species identification in meat products is qualified. ELISA is specific for the detection of muscle protein. In view of food legislation the achieved results have to be verified by another analytic procedure.
