Two fragments of the mitochondrial cytochrome b gene were analysed by PCR-SSCP to determine the species of origin of sturgeon caviar. Amplicons of 116 and 123 nucleotides were converted into single-stranded DNA, separated by native polyacrylamide gel electrophoresis and visualized by silver staining. Several combinations of gel and buffer types were tested. Species-specific patterns were obtained for beluga (Huso huso), osietra (Acipenser persicus) and sevruga (A. stellatus) caviar.
