The influence of the salt composition of casein-water-Cd(NO_3)_2 and defatted milk-Cd(NO_3)_2 systems on the partitioning of Cd~2+ during acidic precipitation of casein was studied. The conditions that minimize the content of the toxicant ion in theisolated protein (pH and salt composition) were determined.
