Crayfish are widely cultured throughout the globe, and even more widely harvested from natural habitats. These freshwater crustaceans have a number of desirable attributes from a culturist's or consumer's perspective, but although there are well over500 species of crayfish in the world very few are actually cultured. Of those that are, some are tropical while others are sub-arctic, but most are found in temperate climates. Production of crayfish is increasing in many countries as optimal managementpractices have become better defined. Market recognition and demand for crayfish has also increased in a number of countries, including China, the United States, and the European Union.
