Adding value has always been a valuable means by which farmers can escape the grip of commodity prices. It is most widespread in the dairy industry, but potato farmers have also been adding value by entering into crisp production. Now, in Shropshire,a farmer is doubly adding value. Phil Mann, who farms 600 acres at Hopton Heath, between Shrewsbury and Market Drayton, sank a 200-foot well in 2003 and started selling water under the brand Spring H2O.
