Allergen of the Month - Fusarium

Fusarium is a large genus of filamentous fungi widely found in soil, marine or river environments, and on plants throughout the world. While most species are saprobes, there are numerous species which are pathogenic and can cause crop damage, and if ingested, human disease, and are the most important toxigenic crop fungi in the northern temperate regions. A survey of plant-derived foodstuffs revealed traces of several Fusarium trichothecene toxins in a large majority of cereal-based foods, one eighth of fruits and vegetables, and none in pseudo-cereals amaranth, quinoa, and buckwheat.
