摘要

The 3rd International Symposium on Trace Elements in Food (TEF-3) which took place on 1-3 April 2009 in Rome, Italy was reported. The main objective of symposium was to assemble experts with different backgrounds to discuss trace elements and all its aspects related to human health, with special emphasis on biological effects of elements. The topics which were covered in the symposium included toxicity, bioaccessibility, bioavailability, speciation, sources and transfer in the food chain. Analytical quality in the determination of trace elements was discussed with respect to internal and external quality control procedures and the reliability of published analytical data. Some other topics which were discussed in the symposium included the use of stable isotopes in vivo studies by IPD-HPLC-ICP-MS, and that of in vitro method for assessing elements bioaccessibility as influenced by bread making and the biomonitoring iodine in the US population by CDC.
