摘要

Cheese is the generic name for a group of fermented milk based food products. Earlier cheese making was an art, but towards the end of 18th century, with growth of science and technology, with mechanization has exerted tremendous influence on cheese making technology. The first cheese factory was built in 1851 by Jesse Williams in New York. Cheese industry showed growth in later half of 1800's.
