Convenience, coupled with new varieties, creates added interest and demand for this worldwide staple. Rice has long fed people worldwide. There are more than 7,000 known varieties of rice, all of which can be categorized into three basic groups: long,medium and short grain. Long grain rice represents the majority of the rice sold in the United States and is the preferred variety of cooks. Medium and short grains tend to be softer and therefore, less separate when cooked. There is also specially rice like sweet, waxy and aromatics that give off an aromatic smell when cooked.
