Once undistinguished and less respected than European cheeses, American cheese products are stepping up in quality and variety. American cheese, once regarded as "plastic" because of its lack of character and taste, is definitely shedding that image.While it has been slow in coming, many consumers in other countries are now recognizing the fact that U.S.-produced cheeses are becoming known for their quality, distinctiveness, consistency and variety. They are also being recognized as being producedunder stringent safety guidelines and procedures.
