Not long before she died, my Grandma Jennie proudly introduced me to her own new recipe: gefilte chicken, a dish modeled on gefilte fish. It was delicious--smooth, lightly seasoned ovals of incredibly delicate texture, poached and then cooled in richbroth she had first made from the chicken. Like any innovator, Grandma Jennie had a few things going for her. She was an expert in her field, a strategist, and a visionary, willing' to stretch herself to see new versions of old dishes. Her experience was not an obstacle but a pathway to new ideas. And she had tenacity.
