Single cell protein: production and process.

Single cell proteins (SCP) are obtained from dried cells of microorganisms and are used as protein sources in foods and feeds. This review describes the production and applications of SCP. Aspects considered include: definition of SCP; microorganisms and substrates used for SCP production; the large scale development of processes for SCP preparation; SCP derived from high energy sources; SCP from wastes; fermentation procedures for production of SCP; economic factors; consumer acceptability and toxicology of SCP; and SCP processing for food use (mechanical and non-mechanical methods of cell wall destruction, nucleic acid removal).
