As promised in the fall 2013 issue of the American Wine Society Wine Journal article "Winemaker Fills a Need," further investigation of the breathable cap has revealed quite interesting data. Timothy Keller has been in the wine business 15 years. As aUC Davis graduate with degrees in Viticulture and Enology, he began developing his winemaking passion. Starting in the Stags Leap District, he honed his winemaking skill, creating noteworthy wines only to find unacceptable losses in the bottle aging process. Corks are prone to contaminating the wine with a compound called TCA, or "cork taint." But a more widespread problem of random oxidation can occur, depleting the original bouquet and aromas and providing a less 'than pleasant finish.
