A green tomato, or a hard green apple, or a hard flesh cantaloupe, or a tough peanut are all lousy eating, because they were "plucked" too soon, and hence not well ripened! Honey, too, has to be ripened - ripened by the bees. You can't do it, the suncan't do it, time sure does not do it. Non-ripened honey ferments, turns into alcohol and other nasty things.
