A variety of milk-derived biologically active peptides have been shown to exert both functional and physiological roles.The most downloaded BTJ paper in April 2007 is a review entitled"Putting microbes to work: Dairy fermentation,cell factories and bioactive peptides"by authors from Teagasc(The Irish Agriculture and Food Development Authority).Dr.Stanton and colleagues discuss the exploitation of milk fermentation towards the development of functional foods conferring specific health benefits to the con-sumer beyond basic mutrition.
