摘要

Analysis of the nutrient contents of chanachur has been reported. Fat, protein, ash, sugar and minerals were determined. The products contained high proportions of fat and protein. But the quality of the nutrients was poor. Proteins were severely denatured and fats were rancid and saturated. The results indicated that there was a big loss of quality of the nutrients which might be due to the frying of the products during preparation.
