The various sugars in honey account for around 80% of the final product. The Codex Alimentarius Commission (Codex) advises that for most blossom honeys, fructose and glucose content (sum of both) should be no less than 60g/100g and sucrose content should be no more than 5g/1 OOg.So what accounts for the other 20% Well, a large portion of that 20% is accounted for by water (capped honey typically contains 17-18% moisture), without which the honey would be less of a sticky solution, and more of a rock-hard clump.
