Hydrolysis rates of monoesters and triacylglycerols by three lipases (Lip-I, Lip-II and Lip-III) from rice bran variety, BR-11 were determined. With respect to substrate specificity the lipases exhibited high specificities towards triacylglycerols andhydrolyzod ester bonds of short-carbon chain acylglycerols faster than long-chain acylglycerois. The lipases were also exhibited more or less equal specific activities for the three lipases except coconut oil. When 2-oleo- 1,3-distearin was used as substrate, the lipases were capable of preferentially hydrolyzing fatty acids ester bonds at the 1,3- position.
