As a consequence of the European Regulation No. 1169/11 of January 2015, all the labels and books of the ingredients of food products marketed in Europe must be changed. In particular, the presence of compounds regarded as allergen or able to induce some form of intolerance must clearly be evidenced in the label to inform the costumer. To conform to these new rules, the COOP - the Italian leader in the large-scale food retail trade - asked to all suppliers to compile the COOP labelling form reported on line in a virtual portal for every product sold in the gastronomy and bakery/pastry areas. Inside, on this labelling form the ingredients that could be considered allergen are clearly specified by capital letters. The reduced knowledge of food science shown by the suppliers could partially invalidate the correct application of these new rules and then also their positive effects on the consumer's health.
