The beverage market worldwide has over the years evolved to answer a continuously changing consumer demand. In the constant development of new formulations, one particular ingredient has always played a significant role, i.e. the sweetener. From a 100 percent sugar market, manufacturers started to drift towards increasing levels of sugar replacement. During war times, where sugar was in short supplies, the zero calorie sweetener saccharin was becoming very popular. Then followed an increasing use ofa range of low calorie sweetener alternatives to finally reach 100 percent sugar-free products. The emergence of this new low calorie category was mainly due to consumers becoming more health conscious.
