WANDERING around the Boston Seafood Expo this year, it was easy to find the stall run by Spence & Co, an American fish smoking company. But the Spence & Co stand would not have seemed out of place had it been shunted several rows and been placed rightin the middle of the Scottish pavilion, such was the prevalence of tartan on its packaging.
