Consumers are subjected to a wide variety of both positive and negative messages regarding the health effects of dairy consumption. Much of the research suggests that the demand for dairy products has largely benefited from health concerns in the past. In Canada, there is evidence that dairy consumption patterns have reflected an increased concern about dietary fat. Canadian demand for dairy products has been shown to be influenced both positively and negatively by health information. Future demand for dairy products will continue to be affected by health concerns, both because of consumer perceptions as well as government responses to obesity-related issues.
