摘要

Production of jaggery involves extraction of juice from cane, boiling, clarification, concentration, cooling of syrup and moulding. The type of furnace built for jaggery production play an important role on efficiency of juice boiling and quickness in concentration of juice besides other factors. Quickness in boiling of juice has direct impact on the production rate of jaggery and the efficiency indicates the amount of heat generated in the furnace for juice boiling. The functional details includes socio economic status of jaggery makers, manpower used/labours involved for jaggery production, functioning of crushers, performance of existing furnaces, consumer demand, measure to improve the quality, marketing practices followed and problems faced by the jaggery industries were critically analyzed and discussed.
