In 2004, the world production of milk totalled 514 million tons vs. 513 million in 2003, and that of cheese was 4.7 million tons vs. 4.6 million. The world production of butter was 3.90 million tons vs. 4.28 million in 2002, that of full-fat powdered milk was 3.05 million tons vs. 3.03 million and that of low-fat milk powder was 3.0 million tons vs. 3.20 million. Development of the dairy sector was stagnant in Europe and North America, but increased markedly in Brazil, Mexico, Argentina, India and Pakistan. The production of buffalo milk accounted for 15% of total milk production vs. 9% 10 yeas ago, and 90% of buffalo milk was produced in India and Pakistan. The production of UHT, fresh cheese and yoghurt increased, whereas that of fresh milk decreased.
