Much like enzymes native to milk, non-native enzymes, sometimes called exogenous enzymes, can produce both desirable and undesirable effects on the milk and the dairy products made from it.Below is a discussion of the most important exogenous milk enzymes, organised in alphabetical order. While all enzymes catalyse reactions, for the sake of simplicity in this article they are described in terms of causing the reaction.
