摘要

The recognition of Se as an essential trace element and studies into its addition and value in animal feeds and foods are reviewed. Topics considered include: discovery of the element and its early history; approval of sodium selenite and sodium selenate as feed additives; problems with sodium selenite in feedstocks and supplements; selenomethionine, the chief nutritional form of Se; Se yeast as a source of food-form organic Se; fate of ingested selenomethionine; metabolism of selenite and selenate; the selenomethionine content of human tissues and organs; when Se deficiency is actually a selenomethionine deficiency; selenomethionine deficiency in TPN patients; local variations of the dietary Se supplies affecting animals and humans; Se for cancer-risk reduction; and critique of the current RDA for Se.
