Any farm-to-fork traceability system must work for a variety of farms, including those that grow more than one crop, are low-resource, or small-scale, or that sell direct to consumers, Tim Schwab, a food researcher at Food & Water Watch, told a stakeholder input session last week sponsored by the Institute of Food Technologists (IFT).IFT is playing the lead role in carrying out two eagerly anticipated FDA pilot projects to test the industry's ability to trace high-risk products, as required by the Food Safety Modernization Act (see FCN Sept. 9, 2011, Page 19).
