JAPAN'S STRONG appetite for nutraceuticals is driving the need to develop more functional food ingredients using biotechnology.The country's functional food market has been growing at the rate of 12% per year for the last 10 years,making Japan the nation of functional foods,according to Reiri Kurashima of Mitsubishi International Corp.(MIC)who recently presented at the 3rd World Congress on Industrial Biotechnology and Bioprocessing held in Toronto.
