Fruit quality consists of a set of standards that distinguish fruit as superior. These standards include fruit size, color, firmness, sugars, organic acids, moisture content, keeping qualities (storage and shelf life), sensory attributes (sweetness, tartness, texture, juiciness, aroma, flavor and appearance) and nutritional value (vitamins, minerals and phytonutrients). The relative importance of these standards depends upon the interests of particular stakeholders. Growers are more interested in standards that improve fruit prices, such as size, color and firmness, whereas retail markets may be more interested in the shelf life of fruits, and consumers are more interested in a fruit's eating qualities.
