摘要

Fifteen onion cultivars were screened for sweetness, pungency and contents of beneficial compounds in order to identify cultivars suitable for cultivation in Norway. Onions were cultivated in controlled field trials and analysed for concn. of pyruvate, sugars, fructooligosaccharides (FOS), flavonols and antioxidative activity (TEAC assay). Sweetest onion cultivars with respect to low concn. of pyruvate (2.7-3.6 mumol /l) and high concn. of fructose and glucose were NUN 9756, Domenica Supersweet, Collossus, Cronus and Musica; these cultivars also had high levels of juiciness and contained low concn. of FOS and total flavonols. Powell Brown and Tilbury were among the most pungent cultivars and had the highest levels of flavonols and antioxidative activity.
