Public demand for safe, fresh, and nutritious fish has stimulated the rapid growth of farm-raised fish production. Annual sales of farm-raised fish increased from 400 million dollar in 1991 to an estimated 650 million dollar in 1993 in the United States. Farm-raised channel catfish, rainbow trout, and salmon account for over 80% of annual sales. Farm-raised channel catfish represent the majority of total annual sales with an estimated value of 316 million dollar in 1992. Annual sales of farm-raised catfish are predicted to continue to increase, because little growth is anticipated in the amount of seafood imported or the amount of fish caught by domestic commercial fishermen.
