摘要

Although there is interest in the biological activities of catechins, there is a lack of high-quality data on levels in foods. This study therefore determined the levels of (+)-catechin and (-)-epicatechin in 15 different fruits in Bulgaria, using reverse-phase HPLC and fluorescence detection. The fruits analysed included: apple, pear, peach, apricot, plum, cherry, raspberry, blackberry, strawberry, blueberry, grapes, melon, and fig. The values obtained, which are tabulated as mean, minimum and maximum values, are representative for the fruits of the country. Black grapes had the highest levels while catechins were not detected in melons.
